Patio Dining: Pancakes & PJ's

When it comes to brunch, there is no debate among the ladies in our office. Brunch is one of our favorite things to do on the weekends with friends. It has become a weekly ritual for us, giving us a chance catch up and leisurely hangout after a long work week. It's a time to reconnect & relax.

We spend hours sharing where to get the best coffees, migas or pancakes. We usually go out to a restaurant. However, there are definitely days we feel like staying in our pajamas and skipping the long lines at restaurants.

Instead of going out this weekend, we're having a brunch party at a friend's backyard. We're going to cook our own pancakes, set up a DIY Mimosa Bar, and enjoy the nice weather outside. The attire? Pajamas. (Perks of dining at home!!)

There are many DIY breakfast bars and easy recipes to try. These are a few of our favorites that are simple and satisfying.

MIMOSA BAR

Mimosas are the classic brunch cocktail. Set up a mimosa bar with plenty of juice options. Guests will love the variety and have fun DIY'ing their mimosa. Be sure to chill the bubbly beforehand! Tip: Add labels to help guests identify the flavor, while also elevating the display of the bar.

JUICES: Apple, Orange, Cranberry, Grapefruit, Pineapple, Pomegranate
BUBBLY: Champagne, Processco, Sparkling Water or Club Soda for non-alcoholic
ADDITIONAL: Ice & fresh fruit for garnish

CLASSIC BISQUICK PANCAKES

Everyone loves a stack of fluffy pancakes. If you and your friends are up for making your own batter, go for it! If you want to minimize cooking time and take the simpler route, then opt for the handy Bisquick Mix. Bisquick can be found at any grocery store. 

INGREDIENTS
2 cups Original Bisquick Mix
2 Eggs
1 cup Milk

DIRECTIONS
Mix ingredients in a bowl. Don't worry if there are a few lumps. Grease a skillet and turn the heat on to low-medium. Pour desired amount of batter, depending on how big or small you want your pancakes to be. Let the batter cook for a minute or two, or when bubbles start surfacing. Flip the pancake and let the other side cook. Tip: Use a spoon to smooth out the batter upon pouring into the pan.

TOPPING CHOICES
Have some fresh berries, sliced bananas and homemade whipped cream ready to go as a tasty alternative to syrup. Your guests will love the ability to customize their own pancakes.

Once the pancakes are ready, its time to eat! If a patio or backyard is available, have brunch outside. It adds a nice change of scenery - natural light, fresh air & sunny skies. Dining outdoors is an experience that can't be beat.
